Harvest starts, sauvignon blanc from the fist block, the oldest vines in the property have matured.
From this grapes we will produce our premium Sauvignon Blanc.
August 14, 3:30 end of harvest.
August 14, 8:00
The grapes are all in the winery, getting everything ready to crush.
Total yield, 10.557 tons (metric). Temperature 12 celsius (just perfect). Ambient temp 29 celsius (normal).
10:00 am, Time to crush.
Everything is hand sorted and moved into the defrancescci pneumatic press.
Total yield, 7357 liters of perfect juice.
Let it settle for 2 days.
